I don’t know about you guys, but if there’s one day I look forward to every year, it has to be Pancake Day. I mean – I know I can have pancakes any day of the year – but I think there’s something extra special about knowing that pretty much everyone is enjoying them on the same day as me. I don’t know why that is!
This year, I’ve been thinking of trying some new toppings on my pancakes, as I pretty much choose the same thing every year. And since I found absolutely loads of delicious looking recipes online, I thought I’d do a round-up of some of my favourites to share with you guys here on my blog. I hope you enjoy having a read and that it gives you some inspiration for what you could top your own pancakes with tomorrow. Now, without further ado, let’s get going …
First up are these delicious looking ricotta pancakes from Charlotte’s Lively Kitchen. They’re said to taste like cheesecake in a pancake and are egg-free as well, which is great for anyone with an egg allergy as it means they can enjoy a tasty treat along with the rest of us. Yum!
02. Meyer Lemon Poppy Seed Pancakes
Next up, is a recipe from Recipe Runner that I’m most definitely going to be trying – Meyer Lemon Poppy Seed Pancakes. I’m a big fan of anything with poppy seeds on, and I think the seasonal Meyer Lemons would add a pop of sunny, bright, fresh flavour to the pancakes. They look super light and fluffy too, which would make them perfect for Pancake Day Brunch!
Ever since I was a child, I’ve been a big fan of cherry pancakes, and this cheats recipe from Good Housekeeping is right up my street! It uses ready-bought crêpes and just a few other ingredients, making them the perfect treat for anyone working late into the evening to have when they finally get home. Delicious!
Anyone who knows me well will know that I eat a lot of bananas, so when I came across these delicious-looking banana pancakes from Bake. Eat. Repeat I just knew I’d have to try them out for myself! The pancake mix is actually made from the banana itself and is said to mix up really quickly. This makes them a fantastic alternative to something like buttermilk pancakes. I think my whole family would enjoy these as a tasty breakfast treat. How about you?
05. Doughnut Pancakes with Doughnut Glaze Syrup
If you’re looking for a real show-stopper of a pancake this year then how about trying Cooking Classy’s doughnut-shaped pancakes with a doughnut glaze syrup!? They look absolutely incredible on the plate, and I know Stacey and Oscar would tuck into them straight away because they love anything with sprinkles on!
06. American Blueberry Pancakes
Another pancake topping I really love is blueberry, and these American Blueberry Pancakes from BBC Good Food are light, fluffy, and packed full of fruit, which is exactly how I like them! I can imagine these to look amazing stacked high with loads of syrup and extra fruit. And even if I don’t choose this topping for my pancakes tomorrow, I’m definitely going to try the recipe out soon as they look super simple to make.
I love the fact that there are so many delicious-looking vegan pancake recipes online these days. And the one I’d most like to try is this vegan cinnamon pancake recipe from Where You Get Your Protein. I’ve always been a fan of cinnamon rolls, and these are said to taste very much like them, making them a fab choice for me this Shrove Tuesday.
08. Strawberry Cheesecake Protein Pancakes
Looking for a pancake that’s gluten-free this Shrove Tuesday? Then how about giving these strawberry cheesecake protein pancakes from Abbey’s Kitchen a try? Not only do these decadent strawberry cheesecake stuffed layered protein pancakes look great, but they’re totally gluten-free, low in fat and packed with high-quality fermented dairy protein. It’s safe to say they’d be a real winner in our household!
09. Harry Potter Butterbeer Pancakes
Harry Potter fans, listen up! I’ve found the perfect pancake idea for you guys this Pancake Day – Butterbeer ones! Yes, the lovely Rebecca over at Sugar & Soul created these awesome pancakes loaded with caramel, butterscotch, vanilla, and butter as a nerdy way to start your day. Don’t they look incredible? I can imagine these being served to wannabe witches and wizards in The Great Hall at Hogwarts each morning. How about you guys?
If you like a bit of Black Forest Gateau then how about giving these delicious-looking black forest pancakes from Hungry Healthy Happy a try? They’re super simple to make and look incredibly tasty. And I know I’ve said this about all the pancakes I’ve shared in my round-up but I don’t think you can argue with me on this one, can you?
11. Beghrir – Moroccan Semolina Pancakes with Maple Nutmeg Roasted Plantains
I love discovering pancake ideas from other countries and cultures. So when I found this recipe for Moroccan Beghrir pancakes with maple nutmeg roasted plantains over at Recipes From A Pantry, I just knew I had to include it in my post. I’ve re-created quite a few of Bintu’s recipes in the past and they’ve always tasted fab, so I just know these will too. And they’re also dairy-free, refined sugar-free and suitable for vegans, which is great. I like it when I find something so many of us can try.
12. Easy Light Lactose-Free Pancakes
People who are lactose intolerant shouldn’t worry about not being able to have any pancakes this Shrove Tuesday as there are plenty of lactose-free recipes available online. My favourite has to be this one for easy, light, lactose-free pancakes from An Italian In My Kitchen, as they’re super quick and easy to make!
13. Vegan Rum and Raisin Pancakes
One thing a lot of people in my family like is rum and raisin flavoured ice creams and desserts. So I think this vegan rum and raisin pancake recipe from Anna Banana would be right up their street. Not only do they look great, but Anna promises the recipe is fool-proof too. So even the worst cooks among us should be able to pull these off without a hitch!
14. Gluten-Free S’mores Pancakes
Next up, I’ve gone for a recipe that’s both gluten-free and vegan. And it comes in the form of a delicious S’mores pancake from Strength & Sunshine that almost looks too good to eat. The best part is that you don’t need a campfire to make these, and they’re much healthier than actual S’mores too. What could possibly be better?
15. Pumpkin Pancakes with Pecan Praline Syrup
This next pancake might not be one you can make on Pancake Day, but if you’re reading this post later on in the year then you’ll definitely be able to give it a go! These lightly spiced pumpkin pancakes topped with a homemade buttery pecan praline syrup from Celebrating Sweets sound like they would make the perfect Autumn breakfast or brunch. And I don’t know about you, but I’d be washing them down with a Pumpkin Spice Latte for sure!!
16. Sweet Potato Pancakes with Marshmallow Sauce
Got some leftover sweet potatoes? Then how about using them to make yourself some delicious sweet potato pancakes like Tina from The Worktop did here!? The pancakes are really easy to make, and Tina topped hers with a creamy marshmallow sauce, although you could leave that off if you wanted to keep them healthy. Again, I think these pancakes would be ideal for breakfast or brunch.
17. Nutella and Buttermilk Vanilla Pancakes
I think it’s safe to say that Nutella and Pancake Day go hand-in-hand, so I just couldn’t resist including Mom Foodie’s Nutella and Vanilla Buttermilk Pancakes in my post! Each pancake has a dollop of delicious Nutella on top and is finished off with some whipped cream and strawberries. Divine!
Another flavour I’m a big fan of is gingerbread. And Creme De La Crumb’s Gingerbread Pancakes look mouthwateringly good! Topped with cinnamon maple syrup and a dusting of icing sugar, they’d be bound to go down a treat at our house this Shrove Tuesday. And I bet they smell phenomenal! I love nothing more than the smell of gingerbread wafting through the kitchen during the winter months, and I’m sure I’d love it just as much now.
19. Savoury Herb Crepes with Hollandaise Sauce
If you’re after a more savoury pancake this Shrove Tuesday, then I highly recommend giving Cooking & Beer’s Savoury Herb Crepes with Hollandaise Sauce a go. I made these for our Easter Brunch last year and they went down a storm! I like having ham inside of mine, but you can pick whatever filling you prefer. I can promise you they’re delicious though and you won’t regret giving them a try.
20. Red Velvet Pancakes with Cream Cheese Glaze
Next, I’ve picked out these tender fluffy red velvet pancakes finished with a cream cheese icing to mimic a gorgeous red velvet cake from Cooking Classy. These gorgeously red pancakes are an absolute delight to look at, and I’m sure they’d be completely irresistible to everyone sitting around the kitchen table this Shrove Tuesday.
If you’re looking for a super indulgent treat this Pancake Day then you definitely want to be giving these Hot Chocolate Pancakes from Handle the Heat a try! They feature rich chocolate buttermilk pancakes with a thick chocolate fudge topping and a garnish of cute mini marshmallows. Perfect for those of us with a sweet tooth. Yummy!
22. Gluten-Free Vegan Fluffy Pancakes
Another gluten-free vegan recipe I want to try is this one from Rhian’s Recipes. They’re said to be simultaneously pillowy and chewy on the inside, and perfectly crispy on the outside. And, as an added bonus, they’re super easy to make – no blender required. How tasty do they look!?
Another pancake recipe with a difference is this Carrot Halwa one from The Delicious Crescent. They are cardamom scented dessert style carrot pancakes which are sure to make a healthy treat for you this Pancake Day. The recipe is super easy to follow and includes a delightful blend of spices, almonds or cashews, and raisins served with an amazing rose water flavoured ricotta cream. This is definitely a recipe for the more adventurous among us!
24. Apple and Granola Oat Pancakes
I’m planning to start my day tomorrow with a pile of delicious apple and granola oat pancakes from Hungry Healthy Happy. Topped with some creamy Greek yoghurt, a drizzle of maple syrup and some extra apple and Nutri-Brex granola, these Apple and Granola Oat Pancakes will be sure to give me plenty of energy to tackle my day. I can hardly wait!
And last, but certainly not least, I’ve picked out these Raspberry Ripple Pancakes from Sainsbury’s. These are Scottish-inspired pancakes that are perfect for dessert or a weekend brunch. I’m a big fan of raspberry’s so these would be sure to go down a treat. And even though the recipe requires you to make your own coulis, it looks simple enough to do.

In Russia we celebrate a pancake week in early March (actually it’s on now). It is common to go to see your friends and family and eat pancakes all the way. It is believed to attract Spring. Just one day is not enough for Russians!
